Avocado and Chickpea Wrap
Ingredients:
1 ripe avocado
1 can of chickpeas, drained and rinsed
1 medium carrot, grated
1 small cucumber, thinly sliced
1 small red bell pepper, thinly sliced
A handful of spinach leaves
2 tablespoons of lemon juice
1 teaspoon of olive oil
Salt and pepper to taste
2 whole wheat tortillas
Instructions:
Prepare the Avocado Mash:Cut the avocado in half, remove the pit, and scoop the flesh into a bowl.
Mash the avocado with a fork until smooth.
Add the lemon juice, olive oil, salt, and pepper to the mashed avocado and mix well.
Prepare the Chickpeas:In a separate bowl, lightly mash the chickpeas with a fork, leaving some whole for texture.
Season the chickpeas with a pinch of salt and pepper.
Assemble the Wraps:Lay out the whole wheat tortillas on a clean surface.
Spread half of the mashed avocado mixture evenly over each tortilla.
Add a layer of mashed chickpeas on top of the avocado spread.
Arrange the grated carrot, cucumber slices, red bell pepper slices, and spinach leaves evenly over the chickpeas.
Roll the Wraps:Carefully roll up each tortilla tightly, folding in the sides as you go to keep the filling inside.
Slice the wraps in half, if desired, for easier handling.
Serve and Enjoy:Serve the wraps immediately or wrap them in foil or parchment paper for a portable meal option.
